Since we got ourselves a brand new casserole dish from HomeSense- we got addicted. We've been experimenting with different recipes every week now and we're absolutely loving it. Autumn and casseroles always been kind of related to each other. They do somehow make you feel cozy, warm and go well with a glass or two of red wine. What's not to love?
So today I'm going to share one of my favourite ingredients to go in the pot. Extras are always welcome! Probably some broccoli or cauliflower would fit right in to this one.
You'll need:
•8-10 baby new potatoes
•2 large carrots
•10-15 Brussels sprouts (it's hard to count these ones!)
•one large red onion
•4 large tomatoes
•some chestnut mushrooms
•a bunch of fresh basil
•250g of red lentils
•3-4 cloves of garlic
•salt+pepper+curry+turmeric
How to prepare:
•cut potatoes, carrots and Brussels sprouts, add them to the pot and boil until soft
•chop the onion and fry in olive oil
•then add mushrooms, chopped tomatoes and fry for about 10mins
•add chopped fresh basil, spices and garlic and mix it up a bit
•the sauce should be pretty watery, so make sure to add some water if it is not.
•put boiled vegetables into casserole dish. pour the sauce equally on top of vegetables.
•close it and place it in the oven (preheated to 180C) for about 30-40mins
and this is it- you're ready to go!
Eat it with some fresh greens and some mozzarella or parmesan cheese and I bet you'll love this!
